Overview
Sodium benzoate, an organic substance, is a white granular or crystalline powder, odorless or slightly benzoic odor, slightly sweet taste, astringent odor, relative molecular mass of 144.12, stable in air, soluble in water, and its aqueous solution has a pH of 8, and soluble in ethanol.
Benzoic acid and its salts are broad-spectrum antimicrobial reagents, but its antimicrobial effectiveness depends on the pH of the food. Its bactericidal and bacteriostatic efficacy increases as the acidity of the medium increases, and it loses its bactericidal and bacteriostatic effects in alkaline medium. The optimal pH for its preservation is 2.5~4.0.
